2 eggplants
Salt and pepper
2 eggs
1 cup milk
3 / 4 cup flour
3 / 4 cup coarse corn flour
1 teaspoon baking powder
Prolific oil for frying

Preparation

- Wash and peel eggplant and cut into thick fingers 2 / 11 cm.
- Sprinkle eggplant with salt fingers and placed in a colander for 30 minutes.
- Rinse well (with light pressure to get rid of water) and dried with a paper towel.
- Mix the flour with corn flour and baking powder in a deep bowl.
- Add the eggs and milk to flour mixture and season with salt and pepper, stirring until good overlap components.

- Heat oil in a frying pan on medium heat, then brown fingers of eggplant until golden on all sides.
